Cook-a-long with Gary Rhodes now!

WATCH as top celebrity chef Gary Rhodes creates this delicious oriental dish with fresh catfish.

BEER FISH

INGREDIENTS:
200g catfish, deboned (or firm white such as seabass, monkfish, skin on)
3 tablespoons of peanut oil
1 tomato, thick slices
1 small red pepper, diced
1 small green pepper, diced
2 pickled red or green chillies, deseeded and finely sliced
25g ginger sliced
4 cloves garlic – crushed
1 teaspoon of salt
 2teaspoons of oyster sauce
2 tablespoon of soy sauce
100-150ml (¼ pint beer)
2 tablespoons of sliced garlic tops or spring onions
sugar
salt and pepper

SEARCH FOOD & RECIPES for:


METHOD:
1) Heat wok and add oil then down heat

2) Put fish in wok skin side down, put salt on top of fish and fry for about 3 minutes or so with lid on until skin is brown

3) Add the garlic and ginger on top of the fish, cook for 30 seconds then turn fish over

4) Add peppers and chillies around the fish.  Move around the pan, keeping to the side.

5) Add oyster sauce over the vegetables

6) Pour on soy sauce over the vegetables, move around the pan and then pour in beer, cover and cook for 5 minutes

7)  Remove lid and reduce liquid for another 2 minutes

8) Sprinkle spring onions and tomatoes on top and serve
